  • Shot Quality: The pressure applied during tamping directly affects the flow rate of water through the coffee. Too light, and you might end up with a watery, over-extracted espresso; too heavy, and the result could be a slow, under-extracted shot.
Achieving the Correct Pressure:
  • The Technique: Aim for a pressure of about 30 pounds. Distribute the grounds evenly in the portafilter before tamping. Hold the tamper perpendicular to the portafilter, apply pressure straight down with your palm or shoulder, not just your arm, for a solid, even compression.
  • Consistency: Use a scale or a tamper with a built-in pressure indicator if possible. Practicing with these tools can help develop muscle memory for consistent pressure application.
